HOMEMADE GRANOLA
3 cups rolled oats
1 cup raw almonds
3/4 cup cashews
3/4 cup unsweetened shredded coconut
1/2 cup, plus 2 Tablespoons maple syrup
3 tablespoons canola oil
1 tablespoon vanilla extract
1 1/2 teaspoons pumpkin pie spice
1/3 cup dried cranberries
1/3 cup yellow raisins
Pre heat the oven to 300 degrees.
Mix oats, almonds, cashews and coconut in a large bowl. In a small bowl stir together the maple syrup, canola oil, vanilla extract and pumpkin pie spice. Then pour over the oat mixture and toss to coat evenly. Spread everything onto 1 or two sheet trays, making sure that you have one thin layer.
Place in the oven for 15 minutes, stir once, then cook another 15 minutes. Remove Granola from the oven and allow to cool for about 10 minutes then stir in the cranberries and raisins.
I love to eat this Granola over Greek yogurt with a sliced banana or diced apples. Its also delicious cereal style, with soy milk.

FRESH FRUIT CREAMSICLES
These are so creamy,refreshing and delicious. Make them now, while we still have some great winter citrus!
1/2 cup cream
1/2 cup whole milk
3/4 cup sugar
2 1/2 cup fresh squeezed orange, tangerine or tangelo juice (I like a blend of the three)
1 teaspoon vanilla extractCombine the cream, milk and sugar in a medium sauce pan over medium heat. Heat the mixture while stirring until the sugar has all dissolved. Don’t let the mixture come to a boil. Let cool. You can speed up the process by putting the sauce pan in the refrigerator. When the mixture has cooled, mix in the juice and the vanilla extract and stir well. Pour the mixture into popsicle molds or small plastic cups with a popsicle stick and freeze for at least 8 hours or overnight.
